We are a group of 14+ adults looking for a villa/house (with a pool) on the beach in Spain, Portugal or Greece. We are planning a week long vacation for next summer.

Try checking Craigslist.com at athens.craigslist.com. They usually list villas for rent. I found a short-term apartment there last semester.
You can also try contacting travel agents. I like Dolphin Hellas and Fantasy Travel. I found them on a Greek website called Athensguide.com or
